  • 4 oz poblano chiles
  • 1 bottle (750 ml) vodka

Method

Cut the chiles into 1-inch pieces. In an airtight container, combine the chiles, along with their stems and seeds, and vodka and cap tightly. Let infuse at room temperature for at least 8 hours, shaking or stirring lightly every few hours to release the chile flavor. The longer the infusion time, the deeper the flavors. Taste and make sure the infusion is to your liking.
