In a food processor, combine the lemon juice, hot sauce, Worcestershire sauce, onion, celery, poblano, serrano (if using), garlic, and horseradish and pulse until finely chopped and juicy. Transfer the mixture to a bowl, add the ketchup, pepper, and salt and whisk until well incorporated.
