Ingredients: 1 Tbsp. fresh lemon juice; 2 oz. black truffle oil; 3 cups canola oil; 4 egg yolks; 1 Tbsp. chopped black truffle; 1 bunch dill; ½ cup garlic; 1 cup shallots; 1 piece crab bacon; 2 slices brioche bread; 1 oz. truffle cheese; Salt and pepper, to taste; Salt and pepper, to taste; 3 Tbsp. cracked black pepper; 1 piece king crab tail; 1 qt. salt; 2 qts. sugar; 6 lemons; 38 oz. white wine vinegar; 1 qt. white wine; 2 qts. hot water; 3 oz. fresh Alaskan king crab meat, sliced thin; Truffle mayonnaise, to taste; ½ bunch sliced chives

Method

Combine crab meat with mayonnaise to taste, chives, salt and pepper. Shred truffle cheese onto bread slices. Build the sandwich with mixed crab meat and crab bacon. In a non-stick skillet add butter and place the sandwich in the pan and sauté until golden brown on both sides.

Combine all of the above ingredients. Marinate king crab tail in brine for 1 hour. S
