Malloreddus with Clams, Bottarga and Zucchini Flowers

This isn’t the traditional way of serving malloreddus (which are normally eaten with pork sausage sauce), but it’s one that I’ve developed for the restaurant – and it happens to be Roberta’s favourite dish. Sometimes I add cherry tomatoes as well.
