The beautiful yellow-orange color of the saffron butterflies is cheery and spring like, perfect with early peas and the first hot-house basil. This is a dish to make for a special occasion, and it’s the only recipe for fresh pasta in this book. For other times, when peas aren’t available or you aren’t inclined to make pasta, the same exciting combination of flavors and colors can be more simply achieved by using dried pasta and frozen peas.
