Occasionally it’s a pleasure to make your own ricotta cheese. The procedure isn’t particularly complicated, nor does it demand much time. The resulting cheese will be soft and creamy, with a fresh, mild flavor. It’s perfect to serve as a sweet with honey and fresh figs or as a savory with a spoonful of olive oil and plenty of coarsely ground pepper. It also makes a delicate sauce for pasta.
