This is a very pretty confection with smooth disks of colored almond paste bracketed by perfect walnut halves, the whole thing netted in threads of caramel. The caramel will soften when exposed to the moisture in the air, so keep these in an airtight container until just before serving.
Use any flavor of almond paste or a mixture of flavors and colors. Roll a large marble of paste between your hands to make a smooth ball; then press it gently to make a flat disk. Embrace the disk with 2 walnut halves. Roll the sides in the finely chopped pistachio nuts.
