“Baccalà” belong to the family of Gadidae, the most typical variety being cod. The most common species in our seas are the Gadus minutus and the Merlucius esculentus or hake, quite a bland fish but one that is easy to digest on account of its light flesh. It is good for convalescents, especially when poached and seasoned with oil and lemon juice.
