A buttery – or Rowie, or Aberdeen roll – reminds me a little of a French croissant. It is very rich and flaky. It is said to have been made for fishermen, as they needed something that could last longer than the more traditional bread; it is also jam-packed with fat, so provided loads of energy for the fisherfolk working hard out at sea.
