This is a fantastic recipe from the works of a Mrs Margaret B. Stout, who in 1925 published a book called Cookery for Northern Wives, written to document the traditional recipes of the people of Shetland. It was sent to me by her daughter, Margaret Stuart, as she knew I love the Shetland Isles. In fact, I was heading to Shetland a few weeks after I received the book, so I had an understanding of the traditional foods.
