There has been much debate on the origins of marmalade: some say it was invented in Dundee, others say it has connections to Mary, Queen of Scots. I am not sure who invented it, but it was the Scots who made it a popular breakfast ingredient.

This recipe is from the class notes of Jessie Henderson (whom we met), dated 3 June 1893; though the recipe is credited to Mrs Black.
