Once you have tried these delicious ‘sandwiches’, they will become a favourite, I can assure you. Two light, crunchy cookies are squished together with the most delicious yet easy lemony cream. Any leftover filling can be popped into a little ramekin, clingfilmed, then frozen and served as rich lemony ice-cream.

  • 100 g/ oz butter, softened

For the biscuits, beat the butter until soft then add the sugar and beat well until light and creamy. (I use my food mixer, but you can easily do it by hand.) Add the egg, beat again and add the oats, flour and baking powder with a pinch of salt.
