This is the apple pie of my childhood, a plate pie, not a deep one. My parents remember pies like this, and they were always called tarts in Dundee, the word pie being reserved for the small Scotch pie or large steak pie. It was usually served with custard and always made on an enamel plate or shallow enamel dish. This is a recipe that reeks of nostalgia.
