This is one of our favourite side dishes. It goes perfectly with scallops but is just great with almost anything!

Ingredients

  • 50 g butter
  • glug of vegetable or rapeseed oil

Method

First melt your butter with a glug of olive oil over a high heat in a frying pan. Add your garlic and onions, then lower the heat and slowly fry - you want them to caramelise so take your time and keep stirring and watching the heat so they don’t burn.
