This is a lovely sweet and zesty soup: it can be made with ordinary oranges but it’s a great excuse to use sweet Sicilian blood oranges which are in the shops from December to March.

Ingredients

  • 1 tablespoon olive oil or butter
  • 1 onion, peeled and roughly chopped

Method

Put a pot on a medium-low heat and add the oil or butter. When it’s hot, fry the onion and garlic for 5–10 minutes until they’re soft.

Add the sweet potato, carrot and lentils and give everything a stir.
