The classic summer soup – why try and change one of the best flavour matches in the world? If you can get a hold of apple mint then this gives the soup a different twist. You can use fresh podded peas, the same weight of frozen peas or make this in the winter with split peas. For the split pea option, use 350g split peas and add an extra 200ml of boiling water; then boil hard for 5 minutes and simmer for another 40.
