This salad is all about the dressing. Massaging it into the kale makes the leaves super tender and the seeds give it crunch. You’ve got to love something that makes kale, one of the most nutritionally dense foods on earth, deliciously moreish.
Wash and dry the kale well. Remove and discard the tough stems, then tear the leaves into bite-sized pieces and arrange in a large bowl with the 80 g of spinach.
