Magic happens when fresh marjoram and ripe tomatoes get together! Serve this with lots of crusty country bread so you can mop up any leftover dressing when the salad is finished. And listen to Rodrigo y Gabriela playing ‘Cumbé’ when you’re making it.


  • 1 kg very ripe plum tomatoes
  • 1 red pepper
  • 1 green pepper


Chop the tomatoes into large bite-sized pieces. Halve and deseed the red and green peppers and chop them into pieces roughly the same size as the tomatoes. Peel the cucumber and chop it into similar-sized chunks.

Transfer the vegetables to a serving dish, then mix the vinegar and oil and dress the salad. Season the salad with salt and generous quantities of black pepper, then scatter th
