Freekeh is a firm, chewy wheat grain that has a roasted smoky flavour because it’s picked green and then has the green husks burnt off. It’s highly nutritious and really delicious.


  • 500 g parsnips, peeled
  • 2 red onions, peeled
  • 2 garlic cloves, skin left on


Preheat your oven to 200°C/180°C fan. Quarter the parsnips lengthways and cut out any woody cores. Halve the onions lengthways and cut them into chunky crescents. Put the parsnips, onion and garlic into a roasting dish and toss well in the oil, cinnamon, allspice, salt a
