This dal is a mainstay on all of our menus, from brunch to lunch to dinner. There are no tricks to this soup, but because it’s so simple, it’s important to use the best ingredients you can find. The curry powder that we like to use is a French variety called vadouvan, which is a touch sweeter than your average curry powder thanks to the addition of fried shallots.
