Jaggery is a classic sweetener used in Indian cooking, and is made by evaporating sugarcane or date palm juice. The result is crumbly sugar with hints of molasses and a slightly salty finish. It comes in various shades of brown, and for this ice cream I prefer the lighter golden brown variety, which won’t mask the golden tones of the saffron.
