Changing one ingredient can radically change the flavor of something as simple as a fried egg. You can season it simply with salt and pepper, but I also recommend a pinch of Garam Masala or Bacon-Guajillo Salt.
Heat the ghee in a small cast-iron or stainless-steel skillet over medium-high heat, swirling to coat. Turn the heat to low. Crack the egg into a small bowl, tip it into the skillet, and cook until the egg white sets and the edges become crispy, about 1½ minutes. Transfer the egg to a plate.
