Make a batch of these sweet roasted garlic bulbs every other week, and you will find yourself using them to season any and everything. Spread on slices of baguettes, blend into sauces, or add them as a seasoning agent to vinaigrettes and dipping oils like the Roasted Garlic in Sesame Oil (recipe follows).


  • 1 large garlic bulb
  • 2 tsp extra-virgin olive oil
  • ¼ tsp


Preheat the oven to 400°F [200°C]. Peel off and discard most of the outer layer of papery skin on the garlic, and cut off the top quarter of the bulb. Put the garlic on a sheet of aluminum foil large enough to wrap it. Rub or brush with the olive oil and sprinkle with the salt. Wrap in
