When masala (spice blend) is brewed with tea, it is called Masala Chai. This is my basic recipe for how to prepare masala chai. After preparing the tea, add as much milk or sweetener as you like. (I prefer the taste of maple syrup or brown sugar.) Although milk is traditional, you can also leave it out. In India, folks like to cool their tea by pouring it back and forth between glasses until it is cool enough to sip.
