I keep a batch of this compound butter in my refrigerator at all times. The fat in the butter takes on the colors of the ground toasted spices, resulting in a deep golden butter that’s fragrant, salty, and sweet.
You can use this butter any way you like. I slather it on good sourdough, warm toast, or flatbread. I even spoon it onto baked salmon or mackerel and then finish with a drizzle of lemon juice.
