In India, my dad makes this relish often to eat at lunch or dinner. I add the ginger slices to fresh salads.


  • One 2 in [5 cm] piece fresh ginger, peeled and thinly sliced

Put the ginger slices in the bottom of a clean 1 pt [480 ml] canning jar with a tight-fitting lid. Add the lemon juice and salt. Seal the jar and shake a few times. Refrigerate for 2 hours before ser
