My sister in New York City wonders why she can’t get this dish there. It is so simple, she thinks; why does every meal have to be so complex? Actually, it is simple, and we ate it at least twice a month all through our childhood. I think the seasoning for the meat and the combination with eggs are what make this dish so good.



  • tablespoons salt
  • 2 eggs, at room temperature
  • 4 pounds potatoes, peeled and cut in quarters
  • 1 tablespoon butter
  • ½ cup minced scallions
  • 2 tablespoons minced parsley

Beef Filling

  • 3 tablespoons oil
  • 1 cup minced scallion
  • ¼ cup peeled and diced tomatoes
  • 1 chicken bouillon cube
  • 1 teaspoon minced garlic
  • ¾ teaspoon color* or turmeric
  • ½ teaspoon ground cumin*
  • ½ teaspoon salt
  • 1 pound ground beef
  • Oil or butter for the baking pan


  1. In large pot place 10 cups of water, the salt, and the eggs; bring to a boil.
  2. Add the potatoes, cover and simmer for 15 to 20 minutes, until the potatoes are tender when pricked with a fork.
  3. While the potatoes are cooking, in a small sauté pan over low heat place the butter and scallions. Cook for 8 minutes, add the parsley and set aside.
  4. Drain the potatoes and eggs and discard the water. Mash the potatoes with a fork or potato masher and add the sautéed scallions. Peel and dice the eggs. Set both aside for assembly.
  5. In a large sauté pan, over medium heat place the oil, scallion, tomatoes, bouillon cube, garlic, color, cumin, and salt; sauté for 5 minutes.
  6. Add the beef, decrease the heat to low and cook for 10 minutes, breaking up the meat to remove chunks.
  7. Remove from the heat and set aside.
  8. Preheat the oven to 350°F. Butter or oil an 8 by 8-inch square Pyrex mold. Place ½ of the mashed potatoes in the bottom and spread it evenly.
  9. Spread the beef filling and the diced eggs over the potatoes, and cover with the rest of the potatoes.
  10. Bake for 20 minutes or until completely heated.
  11. Serve.
