Posta Negra is prepared with different cuts of meat in different places around the country; some with rib eye, some with bollo or rolled rump or eye of round, most with punta de anca or top round and even sirloin. The flavor varies with the type of meat but they are all good. This traditional dish is often prepared with Coca-Cola.


  • cup sliced green onion*, 1-inch chunks
  • 6 tablespoons oil
  • 3 tablespoons prepared mustard
  • 5 tablespoons Worcestershire sauce
  • 3 cloves garlic, minced
  • ¼ teaspoon pepper
  • 3 pounds beef rolled rump, eye of round, or top round, in 1 piece
  • 1 medium onion, quartered
  • 3 cloves garlic
  • 2 cups Coca-Cola
  • ½ cup brown sugar
  • ¾ cup red wine
  • 2 tablespoons ketchup
  • teaspoons salt


  1. Place the green onion, 3 tablespoons of the oil, mustard, 3 tablespoons of the Worcestershire, minced garlic, and pepper in a blender and puree.
  2. Place the beef in a nonreactive container and add the blended ingredients. Mix well to coat the meat all over. Cover and refrigerate for 1 to 3 days. (The longer, the more tender the beef will be.)
  3. Thirty minutes before cooking, remove the meat from the refrigerator, and set aside to reach room temperature.
  4. In a medium or large pressure cooker, over high heat place the remaining 3 tablespoons of oil. When it is hot, add the beef fat side down and brown for 7 minutes; turn and brown or seal the other side of the beef for 2 more minutes. Add 2 cups of water, the quartered onion, and whole garlic; cover and cook under pressure on medium heat for 25 minutes. If using a regular pot, cook for 2 to 3 hours.
  5. In a large bowl place Coca-Cola, sugar, red wine, ketchup, the remaining 2 tablespoons of Worcestershire, and salt, mix and set aside.
  6. Remove the pot from the heat; release the pressure, let stand for 10 minutes and open. Add the Coca-Cola mixture and put back on the heat. Simmer over low heat for 1 hour, with the cover ajar (this is the same in a regular pot).
  7. Remove the meat from the pot, let it stand for 10 minutes, slice.
  8. Pour the sauce from the pot and remove the fat. Serve over the sliced beef or on the side.
