This recipe is another to make children eat vegetables.

Ingredients

  • 2 tablespoons oil
  • ½ cup diced onion
  • cups grated carrot
  • 2 cups rice
  • 2 teaspoons salt
  • 4 cups vegetable stock

Method

  1. In a large pot over medium heat, place the oil. Add the onions and sauté for 2 minutes; add the carrot, rice, and salt, and sauté 2 more minutes.
  2. Add the stock and bring to a boil.
  3. As soon as you see the rice on the surface, and most of the liquid has evaporated, cover the pot; reduce to minimum heat and cook for 20 minutes.
  4. Serve.
