These cookies are served to children all around the country since they are very small. They are simple to make but the tricks are to use clarified butter and to beat them for a very short time after adding the flour.


  • ½ pound clarified butter
  • ¾ cup powdered sugar, plus extra garnishing (optional)
  • 1 teaspoon vanilla extract
  • cups flour


  1. Preheat the oven to 350°F. In the bowl of a mixer place the butter and beat at medium speed for 2 minutes.
  2. Add ½ cup of the powdered sugar and vanilla and continue mixing for 6 to 8 minutes.
  3. Decrease the speed to low, add the flour and beat only to incorporate, no more than 1 minute.
  4. Form into 2-tablespoonful balls, flatten and place on a buttered baking sheet.
  5. Bake for 25 to 30 minutes or until lightly golden.
  6. Set aside to cool.
  7. Dust with the remaining ¼ cup of powdered sugar if desired, and serve or save in covered tins for a week.
