Maracuyá* (passion fruit) is nowadays very popular around the world. Try it with milk and you will discover a whole new way to its flavor; in that case, the name changes from jugo to sorbete. I use it for sauces for seafood, and jellies and desserts like passion fruit cheesecake.

  • 1 large passion fruit* (6 to 7 ounces yield about cup of pulp)

  1. Cut the passion fruit in half and remove pulp with a spoon. Place the pulp in a blender with ½ cup of water and the sugar. Blend 10 seconds, pulsing on and off in order to keep the seeds as whole as possible. Strain through a sieve and discard the seeds.
