In my home, passion fruit is one of our favorite fruits to make into drinks, and in the last decade ice creams and desserts. Here is a twist on the use of this deliciously tart and aromatic fruit. I have added it to the most popular salad of the country—lettuce and tomatoes with a vinaigrette.

Ingredients

  • ½ onion, thinly sliced
  • 1 tablespoon pure, unsweetened passion fruit juice

  1. In a bowl, combine the onion, passion fruit juice, ¼ teaspoon salt, and a pinch of ground black pepper. Allow to sit for 10 minutes or more for the onion to lose some of its bittern
