Green tomatoes are served mostly in the inner part of Colombia. This vinaigrette is the traditional recipe, just made lighter with Greek yogurt. It goes great with the crunchiness of the tomatoes.


  • cup thick or Greek yogurt
  • 2 tablespoons minced cilantro
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 4 large green salad
  • tomatoes, thinly sliced


  1. In a bowl place the yogurt, cilantro, vinegar, honey, salt, and pepper. Slowly drizzle in the olive oil and whisk to mix well.
  2. Place tomato slices on a shallow dish, pour on dressing, allow to sit for 10 minutes and serve.
