Pithaya is a Colombian fruit that is now found in many other countries and is of great nutritional value and aids in digestion, so be careful not to over eat it! It is delicious and juicy and can be eaten with cheese as we also do with guava paste—we call this delicious combination “mairimonio” (marriage).

Ingredients

  • 1 pithaya fruit
  • 6 ounces fresh white farmer’s cheese
  • 1 lime, cut into quarters<

Method

  1. Cut the pithaya into fourths lengthwise.
  2. Cut the cheese into ¾-inch × 2-inch × ¼-inch slices.
  3. Arrange in a dish with lime and serve.
