Salpicón or Tutti Frutti con helado is a common dessert all around Colombia. We usually use fresh fruit mixed with some orange juice to prevent oxidation of the fruit. The fruit is typically diced small and after an hour or so of being refrigerated, it releases some of its flavor into the orange juice and thickens it a little. The ice cream is what makes it a dessert and to make this even healthier you could serve it with frozen yogurt.

Ingredients

  • 3 bananas, sliced
  • 2 cups diced papaya
  • 2 cups diced pineapple
  • 2 cups diced mango
  • 2 cups orange juice
  • Sugar (optional)
  • 1 pint vanilla ice cream or frozen yogurt
  • 4 blackberries

Method

  1. Mix bananas, papaya, pineapple, mango, and orange juice in a non-reactive bowl. Refrigerate for at least 1 hour. Add a little sugar if desired, only if fruits are somewhat acidic.
  2. Serve in a tall glass with ice cream or frozen yogurt and a blackberry on top.
