I love making this recipe . . . when I need to take a moment. You’d be surprised how much comfort a mug of hot chocolate can bring.

Whole milk 7 cups 1645 grams
Dark chocolate (53% or higher cocoa content), finely chopped cups 306 grams
Unsweetened cocoa paste, finely chopped ¼ cup 42 grams
Mini Me’s or marshmallows (for serving, optional) as needed as needed

  1. Bring the milk to a boil in a medium saucepan over low heat.
  2. Combine the chocolate and cocoa paste in a medium heatproof bowl. Pour the hot milk over them and let stand for 30 seconds.*
  3. Whisk the chocolate, cocoa paste and milk, scraping the bottom of the bowl where the chocolate tends to settle.
  4. When the chocolate and cocoa paste have been incorporated into the milk, pour the desired amount into your favourite mug.
