Thai jasmine rice is one of the best known of the aromatic rices and one of our favorite daily rices. It is a long-grain low-amylose indica, a softer rice than basmati or most American long-grain rices. The uncooked grains are translucent. When cooked, they are separate but soft and slightly clingy. We buy our jasmine rice in twenty-pound bags, usually Peacock Brand or another “superior quality” rice from Thailand.
