Method

Pour the blackcurrant consommé, sugar, apple juice, agar and sodium citrate into a heavy-based saucepan. Bring to the boil, whisking constantly, and then pour into a container. Refrigerate for 4 hours to set.

Break up the gel using a hand-held blender and then place in a vita prep (or high-speed blender). Blend on high speed until the blackcurrant is smooth. Pass the mixture through a c
