Method

Cream together the sugar and butter in a bowl, using a spatula. Fold through the flour and almond meal and then mix in the tea and mint powder. Roll the paste into a log, wrap in plastic wrap and set in the freezer overnight.

Preheat theo ven to 120°C (235°F/Gas ½).
