Name: Herb-Crusted Salmon with Cardamom Cream
Yield: Serves 8
Ingredients: 8 green cardamom pods, crushed and shells removed; 100 g soft herbs, a mix of parsley, chives and dill, finely chopped; 2 heaped tablespoons grated Parmesan; 2 tsp freshly ground black pepper; ¾ tsp ground white pepper; 100 g butter, cubed and chilled; 2 garlic cloves, finely diced or grated; 1 cup chicken stock; ½ cup fresh breadcrumbs; 1 cup double cream; your favourite fish spice to taste; a little olive oil; 8 x 150 g centre-cut salmon fillets, thick and even-sized; ¼ cup finely diced red onion; salt and white pepper to taste; Dijon mustard for brushing on the fillets
