These delicious mochi-style snacks are found in the Chinatowns of Kolkata. They are best eaten hot before the crispy outer shell starts to soften. Chewy and crispy with a nutty aroma from the sesame seed coating, they can also be found in mainland China and similar versions crop up in Japan and Vietnam.

Ingredients

  • 150 g red bean paste
  • 120 g glutinous rice flour (see notes)

Method

  1. Begin by rolling the red bean paste into 10 x 15g balls and placing these on a plate.
  2. Next, add the flour, sugar and salt to a mixing bowl and stir well. Gradually pour in the boiling water and use a spatula to bring it all together, forming a ball of dough.
