We do one big gnocchi, but if you want to do more traditional shapes, or whatever your gnocchi skills run to, go for it. If you don’t have ceps, baked field mushroom would be nice
Wipe the ceps with a clean cloth and trim or scrape any dodgy bits from the stalks. Cut each cep in half lengthwise then lay them in a single layer in a pan or roasting tray. Cover them with the melted duck fat and keep over a very low heat for 20 minutes. You can now store the mushrooms in the fat until needed.
