Don’t knock it until you’ve tried it—roasted lettuce adds a smoky flavor that complements the deep salty flavors in a Caesar salad dressing. The crisp, compact leaves from the hearts of romaine work best under heat to avoid a limp salad. For a change, swap out the salmon for grilled shrimp, chicken, or tofu.

  1. Preheat the oven to 425°F (220°C). Line a sheet pan with parchment paper.
