Caciocavallo, which is imported from Ragusa, and also known as Ragusano, is now easily available in Italian markets. Hard provolone, not the kind sliced for sandwiches, can be substituted.

Ingredients

  • 1 pound caciocavallo cheese
  • ¼ cup extra-virgin olive oil

Method

Cut the cheese in ¼ inch slices. Heat the oil, preferably in a nonstick frying pan. Add the cheese slices in a single layer, and fry until golden before turning to brown the other side. Serve at once.
