I have a frittata pan that I bought in Italy that you just turn to cook the other side. The next time you travel there, treat yourself to one, or better yet to two, in different sizes.


  • 6 tablespoons extra-virgin olive oil
  • 2 potatoes, peeled and cubed
  • 2 onions, sliced
