I use SAF Gold instant dry yeast. It’s added to the flour, and doesn’t need to proof. It’s good for general bread making, as well as for sweet breads and sourdoughs. It’s available through The Baker’s Catalogue. Regular yeast can be substituted in equal amounts.
Mix all sponge ingredients, cover, and let rise overnight at room temperature.
