  • 2 zucchini (unpeeled), scrubbed and cut into thin rounds
  • Olive oil or vegetable oil for frying
  • 1 pound spaghetti

Method

Heat the oil in a large frying pan, add half of the zucchini in a single layer and fry until delicately browned on both sides. Sprinkle with salt, remove to a dish, and continue with the rest of the zucchini. When all the zucchini are fried, put them all back in the frying pan.

Meanwhile, cook the pasta in boiling salted water for 8 to 10 minutes. Remove the pasta from the cooking water
