This is a very rich dish, so a small portion is quite adequate as a first course or as part of a buffet.

Line the bottom and sides of a -inch springform pan with puff pastry, allowing it to overhang the top of the pan. Cut and piece the pastry as necessary to completely line the pan. Keep it cool while you prepare the filling.
