The ravioli made in Ragusa are unique in that they have a sweet filling, but they are topped with a flavorful meat sauce. I warn you that they are addictive!

Ingredients

  • 2 cups fresh ricotta cheese
  • 2 tablespoons of sugar
  • Grated peel of 1

Method

Place the ricotta in a colander lined with damp cheesecloth, and refrigerate for 2 hours. Mix the drained ricotta, sugar, and grated peel. Roll out dough by hand, on a counter, as thinly as possible, or use a pasta machine set to the next to the thinnest setting. Place heaping teaspoonfuls of ricotta filling 2 inches apart on the long side of the dough about 1 inch from the edge. Fold the dough
