  • 1 large eggplant, thinly sliced
  • 1 pound fusilli or any cut pasta
  • 4 cups


Lightly fry the eggplant slices in vegetable oil as per instructions first paragraph. Cook the fusilli al dente, and drain well. Preheat oven to 375 degrees.

Place the fusilli in a bowl and mix with 2
